Cryogenic technology is simply the use of liquified nitrogen to freeze spices in their raw form at sub-zero temperatures. These spices are then ground into fine particles at that same temperature. This technology of grinding spices ensures retention of maximum aroma, flavour, and taste. At Mantra Masala, we prepare all our spices using Cryogenic technology which helps preserve tradition through innovation.
Cryogenic grinding involves use of liquid nitrogen to bring the masalas to extremely low temperatures and grind them into fine powder, whereas traditional grinding generates heat to grind masala and hence loses a significant amount of the spice’s aroma. The use of cryogenic technology helps to preserve the flavour, aroma, taste, texture and nutritional value of the masalas.
