For the marinade, add 100 gm of sliced onions, 10 gm of chopped garlic, 50 gm of yoghurt, salt to taste, 6 gm of Mantra Nawabi Meat masala and haldi to a grinder jar. Blitz to form a smooth paste.
Coat the mutton pieces with the marinade and allow it to marinate in the refrigerator for 4 hrs.
Heat a large kadai and add mustard oil to it. Once hot, add the dried red chillies, bay leaves, cinnamon, green cardamom, black cardamom and cloves.
Add remaining onions and fry for 15 mins. Add the ginger paste, garlic, green chilli paste and fry for 5 mins
Add 6 gm of Mantra Nawabi Meat Masala, dhaniya, jeera and chilli powder mixed in 100 ml of water. Add the marinated mutton to the pan. Fry the mutton, stirring frequently for15 mins on high heat. Beat the remaining yoghurt and add it to the pan. Add salt and sugar. Mix everything and keep frying till oil comes out.
Add hot water and cook for 30 mins.
Turn off the heat and top off with a little bit of ghee. Cover and let it rest for 5 mins before serving.
